Panzanella

Inspiration:
Leftover bread and bruschetta topping

Ingredients:
  • 3 cups diced day-old Italian bread: 3/4" square pieces
  • 1 1/2 cups bruschetta topping
  • 2 tablespoons good-quality olive oil
  • 1 teaspoon balsamic vinegar
  • Additional salt, pepper, fresh basil (to taste)
Instructions:
  1. Mix all ingredients together. Let sit for 30-60 minutes before serving.
