Leftover bread and bruschetta topping
Ingredients:
- 3 cups diced day-old Italian bread: 3/4" square pieces
- 1 1/2 cups bruschetta topping
- 2 tablespoons good-quality olive oil
- 1 teaspoon balsamic vinegar
- Additional salt, pepper, fresh basil (to taste)
- Mix all ingredients together. Let sit for 30-60 minutes before serving.
