Black Beans with Garlic, Cumin, and Cilantro

Ingredients:
  • 1 can black beans
  • 2 garlic cloves, minced
  • 1/4 cup chopped onion
  • 1 teaspoon ground cumin
  • 2 tablespoons olive oil
  • 1/3 cup tomato juice or water
  • 1/2 teaspoon salt
  • 2 tablespoons chopped fresh cilantro

Instructions:
  1. Rinse and drain black beans.
  2. Cook onion and garlic in oil in a small heavy skillet over moderately low heat, stirring, until softened, then stir in beans, cumin, cilantro, salt, and water and simmer, stirring, until beans are heated through.
