Ingredients:
- 1 can black beans
- 2 garlic cloves, minced
- 1/4 cup chopped onion
- 1 teaspoon ground cumin
- 2 tablespoons olive oil
- 1/3 cup tomato juice or water
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh cilantro
Instructions:
- Rinse and drain black beans.
- Cook onion and garlic in oil in a small heavy skillet over moderately low heat, stirring, until softened, then stir in beans, cumin, cilantro, salt, and water and simmer, stirring, until beans are heated through.
