Quinoa with Black Beans and Cilantro

Inspiration:
An attempt to make more vegetarian dishes!

Ingredients/Instructions:

Notes:
I *loved* this dish! We do not care for bell peppers, so I substituted a large tomato, chopped, and added it along with the beans. If you can find cotija cheese, you must buy it. It's so fantastically delicious. This was an easy meal to put together on a weeknight. Serves 3-4 as a main course.

Your CSA looks great! Ours is actually year round out here in CA, but for now we signed up for Sept-Dec to see how it goes. Your beet risotto recipe looks like it might be the perfect solution to our beets :) Thanks!

I have tons of family in St. Paul and love it there...but I probably wouldn't love the winters!

I haven't cooked with quinoa much but I do like it. The cilantro and black beans look great in this dish!
