Product Rave: Trader Joe's Red Curry Simmer Sauce

If you like curry, and you have a Trader Joe's nearby, and you need a quick weeknight meal, you MUST try this sauce!

I cut chicken breasts into 1-inch chunks and sauteed them in a little canola oil until cooked through. I threw in a few handfuls of baby spinach, about a cup of frozen peas, and sauteed a couple minutes longer, added the simmer sauce, and simmered until warm. I served over rice, although you can't tell from the photo.It was absolutely delicious. My only slight complaint was that it was pretty salty. But it's otherwise as good as you'd get at any Thai restaurant.

When Tim tasted it, he looked at me and said, "This is the BEST curry sauce you've ever made!" I told him I didn't actually make it, but I don't think he heard me. He was too busy with his dinner. Then he gave the sauce the best compliment ever: "I think I love this more than tacos."

I have had a jar of this sitting in my pantry for probably a year now. I forget that it's there and when I remember, I don't know what to do with it. I am really curious to try it now!

I bought this for the first time awhile ago, it took us awhile to find an opportunity to use but once we did we were hooked! It's definitely a staple pantry item in our house!

I love this stuff! In addition to the traditional way of using it, it also makes an unbelievable topping for a baked potato, and throwing a little into some plain tomato soup is also really delicious.

This sauce is one of my favorite short cuts from TJ's. I love having a bottle on hand for one of those nights when I have no inspiraiton and lots of veggies to use up. I think we're going to TJ's tonight, so I might need to pick a bottle up!

Indeed, this quick sauce is good and handy. I buy it occasionally (and end up using it right away!). I just would add to the conversation that it is really easy to make the same sauce Thai red (or panang, which I believe is milder) curry paste and a can of unsweetened coconut milk, which you can get for a very reasonable price at any Asian market. I use both -- TJ's and the paste/cocomilk. If you buy the red curry paste in a jar or foil packet at a regular grocery store you will pay a premium price (and the coconut milk is quite a bit more there too).

I made curry chicken tonight, using this sauce, a chicken breast, TJ's frozen bell pepper mix, and TJ's jasmine rice. SUPER easy, and so yummy! Filling enough to where I've got enough for lunch tomorrow, too. Love Trader Joe's, they make "gourmet" cooking so easy!
