Inspiration:
A Tuesdays with Dorie recipe chosen by Rebecca of Ezra Pound Cake and found on page 6 of Baking: From My Home to Yours by Dorie Greenspan.
Notes:
These were really, really good. A bit crumbly. I omitted the bell pepper and added extra corn. We enjoyed them with big bowls of Cumin Chili.

Wonderful muffins and dish!!
Great way to enjoy these muffins!
They were a little crumbly, but they were still good, especially with some chili.
These look amazing!
I didn't find them to be crumbly.
We loved them.

Whoa, your muffins look so delicious! They make mine look so pale and weak. Welcome to TwD :)
Those muffins sorta epitomize your blog name, don't they? Mine weren't crumbly; we loved them with chili also.
